'There are several elements that make for a good coffee:- beans, roasting, storage of beans, grinding, water, the machine that makes the coffee, the cleanliness of the machine, the way the coffee is prepared, and for white coffee drinkers - the milk used and how it is frothed. There is also the matter of one's own palate - for years now I have been drinking the same style coffee (a double espresso) which i make myself using the same coffee, the same machine and the same water, so I would have expected that the coffee would always taste the same. However, some days I like it and some days I can't drink it. Of course if it's a hot day and I've just eaten a pickled herring (my favourite food) the coffee might taste a little weird in my mouth, but even sometimes the first coffee on a winter morning can taste bad. The factors are truly personal. So I know when a customer complains to me that he doesn't like the coffee today, it might be as Woody Allen says, a case of 'it's you not me' but abiding by the maxim of 'the customer is always right' I apologise and make them a new one. The life of a barista can be a grind, but when we talk coffee we talk passion, and that is real.' eugenius |

As well as Speciali-tea tasting, Eugenius also offers barista training. You will learn the basics of coffee blends, types of coffees, the grind, and the various appliances used in the making of a coffee from the basic stove-top pot to full-on commercial machines. Training can either be one-on-one or in a group situation (max 4 participants). As Eugenius has no affiliation with any coffee-roaster or appliance distributorship we are totally unbiased.
